Herby Roast Lamb
Ingredients
6 tbsp Brock and Morten Garlic Rapeseed Oil
Large leg of lamb
2 cloves of garlic
Juice from one lemon
Oregano
Method
Pre-heat the oven to 240c.
In a pestle and mortar add the garlic, lemon juice, oregano and Brock and Morten Garlic Rapeseed Oil and combine until all ingredients form a rub.
Stab the lamb with a knife and pour the rub over. Massage the rub into the lamb to ensure it goes into all of the holes you have made.
Put the lamb into an over dish and place into the over for 30 minutes. After 30 minutes turn the oven down to 180c and continue to cook for an hour to an hour and a half depending on how well done you prefer the lamb to be.
Once cooked leave to rest before serving with your choice of accompaniments.
