Truffle Roast Potatoes

Ingredients

1.5kg good quality potatoes cut into 4 cm chunks
2tbsp plain flour
200ml Brock and Morten Natural Rapeseed Oil
Brock and Morten Truffle Oil to Taste
50g grated parmesan

Method

Boil a large pan of salted water and add the potatoes. Cook for around 8 minutes, until the potaotes are just becoming soft.
Drain the water from the potatoes and leave in the pan with the lid on for around 5 minutes. Add the flour to the potatoes and shake to coat and fluff them up.
Heat the oven to 200c and pour the Brock and Morten Natural Rapeseed Oil into a deep tin. Warm the oil in the oven for 5 minutes before carefully adding in the potatoes.
Roast the potatoes for around 20 minutes until cooked through and golden.
Once the potatoes are cooked add to a serving dish and drizzle to taste with the Brock and Morten Truffle Oil and scatter with parmesan.

These can be added to a Christmas dinner or just enjoyed dipped in our Brock and Morten Dips and mayonnaise.
