A Healthy Start to 2017

Most of us have started 2017 with the best intentions of being that little bit healthier after the Christmas indulgences. If like us, three weeks into the year, you are still looking for some inspiring recipes, look no further. Today we are bringing you two delicious, yet virtuous breakfast ideas; both using our rapeseed oil. 

One of the key features of our rapeseed oil is all the natural health benefits it has. As well as being low in saturated fat, it will also provide you with a great boost of Vitamin E and Omega 3,6 & 9. Granola

The first of todays recipes is an old favourite of ours, a delicious homemade granola. By making granola at home you can improve the health benefits of this breakfast favourite by controlling the type of ingredients used. Most store bought varieties include lots of hidden sugar! 

Ingredients

  • 150ml Brock & Morten rapeseed oil
  • 2 tablespoons of honey 
  • 500g rolled oats
  • 100g sunflower seeds
  • 100g pumpkin seeds
  • 50g linseed and sesame seed mix
  • 200g raisins
  • 100g dried cranberries (optional)
  • 100g chopped nuts (optional)
  • 100g unsweetened shredded coconut (optional)

Method

Pre heat oven to 160c.

Heat together the oil and honey in a pan. In a separate bowl mix the oats, seeds and nuts and then pour the honey/oil mixture over the dried ingredients.

Stir and coat all the dried ingredients and pour onto a baking tray or two and cook for about 15 minutes.

Keep tossing the mixture throughout and cook until it looks golden and toasted.

Once cooled add the raisins and cranberries and serve with milk, almond milk, yoghurt or fruit juice.

Store in an airtight container to keep fresh.


Eggs, Avocado and Bacon

This recipe might at first look like a heath no, no. However, this has been taken and adapted from the extremely popular Lean in 15 diet. By following a few key points in this recipe you can ensure this breakfast is a healthy, high protein meal that is rich in essential fats and nutrients. We have replaced the olive oil with our Vitamin E and Omega 3,6 & 9 rich rapeseed oil to give you an extra boost of nutrients.

Ingredients

  • 100ml Brock & Morten flavoured rapeseed oil (smoked or lemon depending on taste)
  • 2 eggs
  • 4 rashers of lean bacon
  • 1 small avocado


Method

Cut any fat from the bacon rashers and place under a grill. Grill for 5-6 minutes turning as required. 

While the bacon is cooking poach or scramble the eggs.

Cut the avocado in half, remove the stone and slice lines vertically and horizontally into the avocado. Turn inside out and remove the cubes from the skin.

Add the avocado cubes to a bowl and drizzle with the flavoured oil of your choice. Toss the avocado cubes in the oil and add to your plate. 

Once the eggs and bacon have finished cooking serve alongside the avocado and enjoy!
