Say Hello to Our Sauces!

hollandaise and bearnaise sauce recipe

Yes, you read that correctly! We have two new sauces joining our product range!

We love using hollandaise and bearnaise sauce and as with all of our products, we make the flavours and items that we know we will enjoy using as much as our customers.

As with all of our products, the rapeseed oil that we produce is involved in the making of these sauces too, which gives them a wonderful rich and nutty undertone.

Need some inspiration for using these new sauces? We have plenty.

Hollandaise Sauce

This delicious sauce is most well known for topping poached eggs on muffins, add in roast ham or smoked salmon to create a delicious eggs Benedict. Alternatively, add spinach to create eggs florentine.

There are other super yummy uses for hollandaise sauce too. We love pouring it over fresh, steamed asparagus, when it is in season. Hollandaise sauce is also a fabulous accompaniment to fish dishes too and a welcome change from parsley sauce, which is often used with fish.

Bearnaise Sauce

Think of bearnaise sauce and you would probably think of steak. This sauce works brilliantly with steak dishes as many of you will have already tried. If you haven’t given bearnasie sauce a go before, it is a classic french sauce with a tarragon flavour that also tastes delicious with chicken too.

As well as meat, bearnaise sauce also works very well in a range of other dishes. You can use bearnaise sauce instead of hollandaise in eggs Benedict and eggs Florentine. This will give the dish a more savoury, herby flavour as opposed to the citrusy flavour in hollandaise sauce.

Bearnaise sauce is also wonderful over vegetables. We love it with broccoli!

As with hollandaise sauce, bearnaise can also be used with fish too and actually helps to make a very tasty fish pie. To use it in a fish pie just replace the usual sauce that you would use. We typically reduce our Brock and Morten bearnaise sauce down with a little creme fraiche when adding to a fish pie.
