A Trio of Summer Salads

 
 

Tomato Salad

Ingredients

Large tomatoes (any variety)
A handful of fresh basil leaves
3 tbsp Brock and Morten basil rapeseed oil
A handful of pine nuts

Method

Slice tomatoes and arrange on a plate. Drizzle with Brock and Morten basil flavoured rapeseed oil and top with the pine nuts and basil.

Serve straight away or keep in the fridge for up to two hours before serving.


Rocket Salad

Ingredients

Rocket leaves
Feta cheese
3 tbsp Brock and Morten lemon rapeseed oil
Mixed seeds

Method

Arrange rocket leaves on a large serving platter or bowl.

Crumble feta generously over the rocket and sprinkle the mixed seeds.

Drizzle with Brock and Morten lemon rapeseed oil.


Cous Cous Salad

Ingredients

200g cous cous
Several sun-dried tomatoes
1 tsp mixed herbs
Asparagus spears
3 tbsp Brock and Morten lemon rapeseed oil

Method

Add the cous cous and herbs to a heat proof bowl. Pour over boiling water to cover. Add a lid or cover to the bowl and leave for around 15 minutes.

Whilst you are waiting for the cous cous chop the sun-dried tomatoes into small pieces. Slice the asparagus spears in half and grill on a bbq or in a griddle pan along with the Brock and Morten lemon rapeseed oil.

Once the cous cous is soft and fluffy mix through the sun-dried tomatoes and add to a serving plate. Top with the grilled asparagus and serve.

These salads are the perfect addition to any summer bbq.
