Garlic Potatoes

Ingredients

Charlotte Potatoes
2 tbsp Brock and Morten Garlic Rapeseed Oil
3 Garlic Cloves
A handful of fresh chives
Salt and Pepper to season
Add on: Brock and Morten Mayonnaise made with rapeseed oil to add a creamy finish.

Method

Pre-heat the oven to 180 degrees.
Quarter the Charlotte potatoes length ways to make a small wedge shape. Add to a baking tray and drizzle with the Brock and Morten Garlic Rapeseed Oil.
Slice the garlic cloves into thin strips and add to the potatoes on the baking tray. Toss the potatoes so that the sliced garlic is well distributed. Season with salt and pepper and bake in the oven until crispy, checking regularly and moving round when needed so that the potatoes crisp evenly. This may take up to 45 minutes to an hour.
Once the potatoes are crisp and golden on the outside serve with chopped fresh parsley.
To add a creamy texture to the potatoes add two table spoons of Brock and Morten Mayonnaise made with rapeseed oil to the potatoes and mix thoroughly.
