Homemade Pasta Sauce

Ingredients

300g tomatoes - any variety and size.
One large courgette
One white onion
3 tbsps of Brock and Morten Natural Rapeseed Oil
Chilli - fresh or dried, to taste
1 tsp mixed herbs
4 cloves of garlic, sliced
1 tsp paprika

Method

Heat the Brock and Morten Natural Rapeseed Oil in a pan and add in the chopped onion and garlic. Cook until slightly soft.

Add in the roughly chopped tomatoes and courgette and then the herbs.

Cover and simmer gently for around 20 minutes or until all the vegetables are softened. Leave to cool and then blend.

Serve with pasta on its own, or add in sausage, chicken or anything else you fancy to create a delicious pasta dish.

This pasta sauce is a great way to use up a glut of allotment vegetables. It also serves well as a way to get children to eat hidden veg! This sauce will freeze well too, so make a big batch for a quick supper.
