Roasted Pumpkin

Ingredients

1 pumpkin, roughly chopped
2tbsp Brock and Morten Chili Rapeseed Oil

3 cloves of garlic, sliced
1tbsp honey
A handful of fresh thyme
Salt and pepper

Method

Preheat the over to 180 degrees. Chop the pumpkin into rough pieces and add to a baking tray.

Drizzle the Brock and Morten Chili Rapeseed Oil over the pumpkin and sprinkle the chopped garlic cloves. Add the thyme and season to taste with the salt and pepper. Finish by drizzling the honey over the top.

Put the pumpkin in the over and bake for around 30-45 minutes, depending on the size of the pumpkin pieces.

Once ready serve warm as a side. We recommend this with sausages or roast chicken.

This roasted pumpkin also works well as a soup or pasta sauce. Just remove from the skin, blend and enjoy!
