Lentil Soup
Ingredients
2 litres of vegetable stock
160g red lentils
7 carrots
2 leeks
Fresh chills chopped
2tbsp Brock and Morten Garlic Rapeseed Oil
Method
Chop all vegetables. Soften the leeks on a low heat in a pan with the Brock and Morten Garlic Rapeseed Oil.
Heat the vegetable stock, bring to the boil and add the softened leeks, carrots and lentils. Reduce the heat and allow the lentils and veg to cook for around 45 minutes.
Once the soup is ready, serve with fresh chopped chilli peppers and sourdough.
